RAW KEFIR MARINATED CHICKEN | THE SECRET TO TENDER CHICKEN

CREAMY LEMON CHICKEN RIGATONI WITH RAW KEFIR MARINADE
In many cases, chicken dries out during the cooking process. That being said, let’s transform this expectation into a guaranteed creamy and moist chicken that is incredibly tender – we bet your family and friends will love it! The secret ingredient? Raw kefir – incredibly rich in probiotics and nutrients!
INGREDIENTS
1 Cup of RAW FARM Plain Raw Kefir
1 Tbsp of organic lemon Juice
Zest of half an organic lemon
1/3 cup of fresh organic oregano or 1-2 TBSP dried oregano
1 tsp paprika
2 garlic cloves, finely chopped
2 pounds of organic, pasture raised chicken (breasts, thighs, or legs)
INSTRUCTIONS:
Whisk together kefir, lemon juice, lemon zest, oregano, paprika, and garlic.
Place the chicken in the raw kefir marinade, making sure each piece is completely coated.
Marinate for at least 3 hours, but preferably overnight.
THE END RESULT:
This mixture works especially well because of the acidic nature of the raw kefir and lemon, which will beautifully tenderize the chicken. Plus, it keeps the meat so MOIST while grilling – and we all know how important that is! Naturally, when you take the chicken out, the marinade will remain. The best part is that you can use it as a sauce for other dishes such as making Rigatoni Pasta, or other creative recipes!
