On the other hand, most milk sold in stores is pasteurized (heated) and homogenized (crushed). Pasteurization is done by heating the milk to very high temperatures which destroy, damage, and denature the wonderful nutrients and beneficial bacteria found in raw milk, while homogenization breaks the fat globules into tiny pieces so that it is the rich, white color and smooth texture that we're used to. This process prevents cream from rising to the top and saves you the step of mixing the cream back into the milk yourself before drinking it. But then you lose the lovely cream line! We love how our fresh raw milk has a natural color (due to seasonal grass-grazing) and a thick cream line. Raw milk that comes from healthy cows and whose milk has been tested for food safety is absolutely the best!
